I now have the x3max flashed with a working 3.50 spoof/PSN access payload, but after running the first non-working hex i started to have issues with video playback.

To fix this problem right now, I would pause the movie for about 3-5 minutes to allow PMS to fill up the streaming buffer to about 200M before I start playing. I have a 2TB external HDD connected to the PS3 and store movies as well as my external GAMEZ folder on it. If you watch the status tab in PMS during streaming, you'll see that the streaming buffer hardly holds any data before it got streamed down. What I observed is that mencoder doesn't transcode the frames fast enough into the buffer before streaming it down. IMO, I don't it is the network speed or disk-space.

and I still have stuttering problem with streaming 1080p MKV files in real-time to my PS3. The Media Server Connection allows other. I have a Pentium 4 with dual core, 3.6Hz, 3Gb RAM, Gigabit network, and plenty of disk-space. Turn off the PS3 Media Server which is a resource hog taking up system resources that DAI really needs to work.
